Black Magic Cake

INGREDIENTS

  • 1 3/4 cups  of flour
  • 1 cup of butter milk
  • 2 cups of white sugar
  • 2tsp of baking soda
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • 1 tsp of salt
  • 1/2 cup of vegetable oil
  • 2 eggs
  • 1 cup of strong brewed coffee

METHOD

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pansIn .
  • large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center.
  • Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack. Fill and frost as desired.

 

Vibibi (Rice and Coconut Pancakes)

 

INGREDIENTS

1 1/2 cups Rice, Soaked over night

3/4 cup caster sugar

1/2 cup light coconut milk

1 cup heavy coconut milk

1 egg

2 tsp all-purpose flour

1 tsp cardamom powder

1 tsp yeast

Oil

METHOD

  1. Wash the rice and soak in 3 cups of water overnight. Soaking it overnight makes the rice very soft and easier to blend into a very fine batter.
  2. Drain the water and add the rice into a blender. Pour in half of the heavy coconut milk and caster sugar and blend. Depending on your blender you may have to do this for 5-10 minutes until the rice has blended into a very fine batter.
  3. Add the remaining heavy coconut milk, light coconut milk, egg, cardamom powder, yeast and flour and blend again for 1 minute.
  4. Pour the batter into a large bowl, cover with cling film and sit in a warm place for 2-3 hours to rise.
  5. Stir the mixture and scoop using a ladle. Heat a pan and add 1 tsp. of oil. Pour the batter into the center of the pan and cover the pan with a lid. Cook for 1 minute. When the top of the pancake starts to become dry, remove the lid add 1 tsp. of oil on the pancake.
  6. Flip the pancake and cook for 30 seconds

Mexican Brownie Chocolate

INGREDIENTS

Brownies

  • 1 package (family-size) fudge brownie mix
  • 1 cup (6 ounces) semi-sweet chocolate chips
  • 1 tsp of pure vanilla extract
  • 1 tsp of cinnamon ground

Frosting

  • 1 container (16 ounces) chocolate frosting
  • 1/4 tsp of cinnamon ground

METHOD

  1. Prepare brownie mix then stir in chocolate chips, vanilla and cinnamon. Spread in greased  baking pan.
  2. Bake and cool .
  3. For the Frosting, mix chocolate frosting and cinnamon. Spread over cooled brownie. Cut into squares.
